Long Boy Burger Bites - easy meatloaf burger bites that are great for parties, lunch, and dinner. I took these to a party and they were gone in 5 minutes! Comfort food at its best! Ground beef, egg, BBQ sauce, onion, garlic, Worcestershire, Montreal steak seasoning, and crushed cornflakes baked on top of Hawaiian rolls and topped with cheese. Dip in extra BBQ sauce or ranch dressing.
Separate rolls into 12 individual rolls and cut in half lengthwise. Place on a baking sheet cut-side up. Spray with olive oil or cooking spray and bake 5 minutes.
Combine ground beef, egg, ¼ cup BBQ sauce, onion, garlic, Worcestershire sauce, crushed cornflakes, and steak seasoning.
Divide the meat mixture into 24 balls and place one on top of each roll. Press down slightly. Spread remaining ¼ cup BBQ sauce on top of meatballs.
Bake for 10 to 12 minutes. Remove from oven and top with cheese.
Bake an additional 3 to 5 minutes, until cheese has melted.
Notes:
Do NOT cook the ground beef. You are basically making meatballs that will cook on top of the rolls. I know it sounds weird, but it totally works!
Feel free to substitute ketchup for the BBQ sauce.
You can use any cheese you prefer. I used sharp cheddar. American, swiss, or provolone would all be delicious.
My favorite store-bought BBQ sauces are Sweet Baby Rays, Stubbs, G.Hughes, and Williamson Brothers.
Can Long Boy Burger Bites be made in advance? Yes! You can assemble the meatballs ahead of time and refrigerate overnight.
Can Long Boy Burger Bites be frozen? I haven't frozen this recipe, but I am sure it would be fine. You could freeze them unbaked and thaw and bake when ready.
If you don't want to make small bite-sized burgers, feel free to substitute burger buns or hoagie buns. You may need to increase the baking time if baking larger burgers.
